Springtime fruits and mindful eating combine in this flavorful dish
April is a time of energy, of nature blossoming, and our lives springing forward with momentum. Keep fueled in a healthy and plant-based way with this special treat. We celebrated my birthday with this recipe and it was a big hit. Beyond being delicious, here is how the fruits boost your life force.
Oranges: Contain flavonoids, glutathione, and limonoids that help fight off viruses, deactivate heavy metals in the body, and are an abundant form of bioactive calcium. They help the kidneys, gallbladder, protect from radiation damage, and lessen depression.
Pineapples: Rich in vitamins, contain disease-fighting antioxidants, ease digestion, boosts immunity, suppresses inflammation, lessens arthritis, helps with sports recovery and surgery healing.
Coconuts: Rich in vitamins and healthy fat, improves heart health, helps blood sugar, contains antioxidants.
When possible, find healthy alternatives to the whipped cream and marshmallows below so you can indulge in this salad while fueling your body with good nutrients. Enjoy and get a little pep in your step with this revitalizing spring dish.
Five Cup Salad
1 cup fresh or canned mandarin oranges, drained
1 cup crushed pineapple, drained
1 cup shredded coconut
1 cup whipped cream (recommend So Delicious CocoWhip as it’s organic and dairy free)
1 cup miniature marshmallows (recommend Toonie Moonie Organics marshmallow creme)
Combine all ingredients and chill. Serves 12.
